Cooking a turkey is scary, but preventing a dry bird is easier than you think. Merlin suggests an Icepack on the breast. I’d add that sticking the whole thing in an oven bag along with one stick of butter will finish you up.
My turkeys are always delicious. Well, unless I burn them.

I’m loving the fact that I *have* to get this planned by Monday morning so I can participate in the Menu Plan Mondays. This week I am working on a project from home from 4pm to 10pm, so I have a sweet friend coming in to watch my four little ones and to cook the evening meal. Therefore, the meals aren’t very elaborate this week. She’s a single 20-something with no kids, so asking her to do much more than babysit is pushing it.
Monday - Pepperoni Pizza
Tuesday - Roasted Chicken, corn (already made in refrigerator) and mac and cheese with homemade bread (from freezer)
Wednesday - French Toast (using some of that freezer bread), Bacon and Eggs
Thursday - Hamburgers with fresh mushroom gravy (butter+mushrooms+a little beef bouillion) and Baked French Fries on white bread buns (unhealthy, I know, but yummy)
Friday - Cubed Steak with homemade mashed potatoes, green bean casserole and fresh biscuits (recipe and pics later this week)

I get tired of the same-old crockpot lunches, but by mixing in a few hot sandwiches, the slowcooker gets a little more exciting. Top this filling with chopped onion, cucumber and sour cream/yogurt.
Makes 4 greek pita sandwiches
INGREDIENTS:
* 1 chopped onion
* 1 lb. deboned, deskinned chicken thighs
* 1 t. lemon pepper
* 1/2 t. dried oregano leaves
* 1/2 C plain yogurt or sour cream
PREPARATION:
Combine all ingredients except yogurt in cooker and stir well. Cook covered on low for 6-8 hours. Take out chicken, shred and then stir back into crockpot w/yogurt. Stuff mixture into yummy pitas.

One of my fav snacks for my toddler is cubed avocado. It’s tasty and it’s healthy, plus, it’s easy for even pudgy little fingers to get from plate to mouth. It also has the advantage of traveling well, if you wait to cut it up until you reach your destination.
Another such treat is tofu. It’s soy-based, so as long as you are not going overboard* tofu is quite healthy for you. Get the firm and cube it for a quick treat that any toddler will love. FYI, older kids seem not to like this taste-less food w/o seasoning.
